自制鸡蛋肠
说起肠粉,在广东是妇孺皆知,从早餐店里、茶楼到五星级的高级酒店,几乎都有供应,因为它美味、价廉,老少咸宜,深受广大消费者欢迎。

其实除了可以到外面吃之外,还可以在家里自己做,做法也是相当简单的,如果自己不方便磨米浆,可以直接买已配好的肠粉,或者是自己买些粘米粉、生粉回来自己调配。在家里做,没有专业工具,可用不锈钢盘或批萨盘代替,只要烧一锅水就可以开始蒸了,自己想要什么味道的都可以,很方便哦,为早餐换下口味,那就自己动手吧。

  • 生粉10克
  • 鸡蛋1或2个
  • 生油5克
  • 精盐3克
  • 清水150ml
  • 炒熟白芝麻少许
  • 菜芯几颗

Steps to make 自制鸡蛋肠

  • 1.原料图
  • 2.蒸肠粉的工具,可用不锈钢盘或批萨盘;
  • 3.将所有粉类混合过筛,加入生油与盐及清水调成无颗粒粉浆;
  • 4.鸡蛋打散成蛋糊;
  • 5.批萨盘刷一层薄油,放置开水锅里蒸热;
  • 6.将批萨盘取出,舀一勺米浆倒入盘内,晃动盘子让米浆均匀铺在盘子上;
  • 7.再舀入适量鸡蛋糊放入盘中(图片是后来蒸到最后才补上的,所以剩下的鸡蛋糊我全部倒入,显得比较多)
  • 8.将装有粉浆的盘放置蒸锅里,盖上锅盖旺火蒸1.5至2分左右;
  • 9.看见米皮鼓起,说明肠粉皮蒸熟了;
  • 10.用刮板轻轻从一边卷起来;
  • 11.这样肠粉就做好了,很简单;
  • 12.将卷起的肠粉码放于碟子中,洒上炒熟的白芝麻,最后将菜芯焯熟,摆放于肠粉两侧,吃时淋上酱汁,滴几滴麻油即可。
