Steps to make 巧克力巴菲

  • 1.蛋白和蛋黄分开,盛蛋白的碗保证干净且无油无水。
  • 2.用打蛋器将蛋白打发。打发的时候分三次加入200克细砂糖。蛋黄里加入剩下的120克细砂糖,用打蛋器打发至颜色变浅,体积蓬松。分三次倒入溶化的黄油,并用打蛋器继续搅打均匀。盛1/3蛋白到蛋黄糊里,用橡皮刮刀从底部往上翻拌的方式拌匀。拌匀后,倒回蛋白碗里。
  • 3.倒入过筛后的面粉和可可粉。用橡皮刮刀继续以翻拌的形式,快速地翻拌面糊,直到形成均匀的蛋糕面糊。
  • 4.放入预热好175度的烤箱里,烤18分钟左右,直到完全膨起。
  • 5.将蛋黄、牛奶、细砂糖放入碗里,锅里倒水烧热后,用小火持续加热,并将装蛋黄的碗放入水里隔水加热并不断搅拌。用刮刀挑起,如果可以在刮刀上挂上厚厚的一层,就说明已经好了。趁热将切小块的黑巧克力倒入蛋黄混合物里,搅拌直到黑巧克力完全溶化。
  • 6.再筛入可可粉,搅拌至均匀。将拌好的蛋黄可可糊冷却到室温
  • 7.动物性鲜奶油用打蛋器打发。将1/3的鲜奶油盛入冷却后的蛋黄可可糊里,用刮刀从底部往上翻拌的方式拌匀。
