宫门献鱼
相传这是康熙出游路过宫门岭的时候在路边店家吃的一道菜,因觉着味美,赐名宫门献鱼,鳜鱼鲜嫩刺少,做这菜正合适呀~

Details of ingredients

  • 鳜鱼1条
  • 1/3匙
  • 味精2小撮
  • 玉米淀粉1勺
  • 料酒1勺
  • 鸡蛋1个
  • 红椒1块
  • 榨菜10g
  • 1瓣
  • 2片
  • 植物油半锅
  • 剁椒2勺
  • 蚝油1勺
  • 鸡粉1匙
  • 白糖1匙
  • 葱花1小把

Steps to make 宫门献鱼

  • 1.鳜鱼剔骨,鱼身切片,加入盐,1小撮味精,玉米淀粉,料酒和鸡蛋清。
  • 2.抓匀腌制15分钟。
  • 3.鱼骨连着鱼头鱼尾入锅蒸制15分钟。
  • 4.红椒切丁。
  • 5.榨菜切丁。
  • 6.锅中倒油,放入干燥木筷后出现小泡时放1片片放入鱼片。
  • 7.炸至鱼片变色后捞出备用。
  • 8.锅中加入1勺植物油,放入剁椒和姜蒜末炒香。
  • 9.放入榨菜丁翻炒均匀。
  • 10.加入适量清水,蚝油,鸡粉,白糖和1小撮味精。
  • 11.煮开后倒入鱼片煮1分钟后关火。
  • 12.鱼片连着汤一起倒在鱼身上。
  • 13.撒上葱花和红椒丁,浇上1勺热油激出香味儿即可。
