凉拌茄子
茄子是夏天的时令蔬菜,不管是蒸、炒、烧、拌都非常下饭。炎热的夏季,厨房就像个大火炉,在厨房煮饭就像蒸桑拿。所以到了夏天,我是能不开火就不开火。

  • 蒜头6瓣
  • 小米辣一个
  • 生抽一勺
  • 蚝油一勺
  • 半匙
  • 鸡精半匙

Steps to make 凉拌茄子

  • 1.茄子2根,削皮,切成条状。
  • 2.茄子里面加入少许盐用手抓捏腌出水后洗净,杀出茄子中的水分。
  • 3.茄子泡水里,加点白醋可以防止氧化变黑。我这个没有马上泡已经有点黑了。
  • 4.茄子挤干水装盘子里,铺平,放入蒸锅。蒸锅上汽后蒸制6分钟。
  • 5.蒸茄子的同时准备凉拌汁。蒜头切末,葱切碎,小米辣切圈,装到小碗里。
  • 6.油烧热后浇到碗里,再倒一勺蚝油。
  • 7.一勺生抽,半匙盐,半匙鸡精,搅拌均匀。
  • 8.茄子蒸熟后拿出来。
  • 9.倒入凉拌汁,搅拌均匀。
  • 10.成品。
