日式冷面 【芸芸小厨】
冷面的清凉味道是最适合夏日里晚餐的了。提到冷面,被大家所熟知的都是韩式冷面,我喜欢的是更加劲道有口感的日式冷面,乌冬面经过热水和冷水的浸泡,口感Q弹。加上之前做日式拉面用剩下的叉烧和各种蔬菜,清凉又满足。

  • 乌冬面1袋
  • 鸡蛋1个
  • 红烧肉100g
  • 黄瓜半根
  • 番茄半个
  • 京葱小半根
  • 柴鱼高汤200g
  • 生抽50g
  • 味淋50g
  • 50g
  • 麻油20g
  • 辣油20g
  • 白醋200g

Steps to make 日式冷面 【芸芸小厨】

  • 1.锅中烧开水,把面放在热水里泡开后,放在冷水里待用。
  • 2.将柴鱼高汤和糖、生抽、味淋一起烧开,等糖化了取出隔冰水冷却。冷却后的汁水加芝麻油,辣油,白醋,搅拌均匀。等汤冷却的同时,摊蛋饼。
  • 3.将蛋饼放冷,切成细丝,西红柿切块。
  • 4.将京葱切丝,黄瓜切细丝。之前做好的叉烧切片。
  • 5.将面放入碗里,摆上叉烧肉、黄瓜丝、京葱丝,再将汤浇上去,一碗日式冷面就做好了。
  • 6.成品~
