Steps to make 煲仔饭秘笈——腊味煲仔饭

  • 1.首先将干瑶柱用水泡涨,大米淘洗、滤水。将大米放入砂锅,加入盐、葱油和泡涨的干瑶柱搅拌均匀,腌制1分钟。
  • 2.加入清水,水位略微超出一手掌为佳,加盖大火煮至水开。
  • 3.待饭面起泡时放入整根腊肠、整块腊肉、鸭舌、小葱,加盖后,改小火煲至10分钟。
  • 4.将广东菜心在另一锅中焯水,萝卜干和毛豆炒熟(根据个人喜好,可加可不加)。
  • 5.在步骤3中取出葱条、腊肠、腊肉,切片,再放回煲仔里;最后放上鸭舌、焯水后的菜心(也可放毛豆和萝卜干)即可。
