糖蒜的作用
  糖大蒜本来是辛热的食物,吃多了容易上肝火,但用白醋和白糖浸泡出来的糖蒜,不仅蒜的辣味减轻,其 辛热之性也变得缓和了,因此,即使阴虚火旺的人,也可以吃一些。尤其吃含脂肪较多的肉类食物时,吃点糖蒜不但可以去除油腻,还能够促进人体的消化、吸收。
药用价值
   1. 蒜水能治小儿久咳;
  2. 糖蒜佐粥佐酒,酸甜可口,有蒜香,又不辣,解腻祛腥,助消化;
  3. 蒜能保护肝脏,诱导肝细胞脱毒酶的活性,可以阻断亚硝胺致癌物质的合成,从而预防癌症的发生;
  4. 蒜的抗氧化活性优于人参,常食能延缓衰老,经常接触铅或有铅中毒倾向的人食用,能有效地防治铅中毒;
  5. 蒜中含有一种叫硫化丙烯的辣素,其杀菌能力可以达到青霉素的1/10,对病原菌和寄生虫都有良好的杀灭作用,可以起到预防流感、防止伤口感染、治疗感染性疾病和驱虫的功效。
