脏脏蛋糕卷
这个脏脏蛋糕卷,其实就是可可蛋糕再夹入可可味的淡奶油,表面淋上顺滑的奶油,撒上可可粉即可,简单版本,但也十分好吃哟。

Steps to make 脏脏蛋糕卷

  • 1.玉米油和水搅匀,乳化好,没有出现水油分离。
  • 2.面粉和可可粉混合后过筛进去。
  • 3.用手动打蛋器搅拌不见干粉即可,分两次加入蛋黄,划Z字拌,拌好之后再加入蛋黄拌。
  • 4.拌好的蛋黄糊状态。
  • 5.蛋清分三次加入糖,用电动打蛋器打至湿性发泡,提起打蛋头,蛋白霜有大弯钩,这样做出来的蛋糕卷才容易卷起来,不会裂。勺1/3打发好的蛋白霜到蛋黄糊里,用刮刀从底部向上翻拌均匀。
  • 6.再倒回剩余的蛋白霜里。
  • 7.用同样的手法拌成细腻的蛋糕糊(不会翻拌手法的可以上网搜索一下戚风蛋糕的制作视频,比文字版更易理解)。
  • 8.将拌好的蛋糕糊倒入铺有油纸的正方形烤盘里,刮平表面,在桌面上震出气泡,烤箱提前10分钟预热到170度,放入烤盘,烘烤18分钟左右(实际烘烤温度要根据自家烤箱脾气而定)。烘烤结束,将蛋糕取出,晾3分钟后立即倒扣在晾架上,趁热撕去底部的油纸,晾。
  • 9.200克淡奶油加可可粉和20糖,隔冰水,用电动打蛋器,打发至九分发。将可可味的淡奶油涂抹在蛋糕上,卷起,放入冰箱冷藏2个小时定型。
  • 10.剩下的淡奶油加糖,打发至流动性强的淡奶油,淋在蛋糕卷上,在上面撒上可可粉即可。
