    一到农历腊月快过年的时候,人们就开始熏制腌过的肉。用这种方法做出的肉能保存很长时间,由于这种熏肉通常在腊月做,“腊肉”也由此得名。

    • 1.芋头去皮,切片。
    • 2.撒盐腌制l5分钟,洗净。
    • 3.蒸锅置火上,入水烧开,放入芋头和腊肉,大火蒸5分钟,取出芋头,再蒸5分钟,取出腊肉。
    • 4.腊肉稍凉,切成与芋头同样大小的片;蒜苗、辣椒洗净切马蹄片。
    • 5.锅置火上,入油烧热,放人蒜苗、辣椒煸炒几下。
    • 6.倒入芋头、加蒸腊肉的汤汁炒至入味。
    • 7.放入腊肉,加适量盐调味。
    • 8.继续翻炒均匀,撒上蒜苗叶掂翻几下后即可出锅。
