昨天买了羊排,做了清汤羊排火锅,吃的暖暖呼呼的,今天换了重口味的红焖羊排,以前发过一道红焖羊排的日志,味道非常鲜美,但是做法略微繁琐,香料味稍重了一些。今天这道红焖羊排有所改进,简单化了,但是味道一点都没打折扣。减去了众多的香料的味道,是羊排的肉香更浓郁了。

Steps to make 红焖羊排

  • 1.羊排斩成块,清水泡1小时,泡出血水。
  • 2.胡萝卜白萝卜切成滚刀块备用。
  • 3.准备好郫县辣酱 辣椒 花椒。
  • 4.葱切段,姜切片。
  • 5.泡出血水的羊排放入汤锅中,注入冷水。 大火烧开,用勺子撇去血沫。
  • 6.血沫清理完毕以后,大火烧开,转中火煮至30分钟。
  • 7.起锅,加入油,下入郫县辣酱煸炒。
  • 8.炒出红油后加入葱姜炒香。
  • 9.下入煮好的羊排翻炒均匀。
  • 10.加入 老抽 糖 葱姜煸炒至上色。
  • 11.加入煮羊排的原汤,没过羊排,烧开后,转小火焖至40分钟。
  • 12.加入白萝卜 胡萝卜块和盐,再焖至20分钟,使萝卜软烂即可
