蚕豆肉末炒雪菜
我家餐桌经常出现的菜就是肉末炒雪菜,今年我家自己腌的雪菜,非常的成功,因为第一次做怕不成功,也没拍下过程图,这回做炒雪菜可方便了,之前我总是在外边买,把雪菜用冷水多泡些时间,把里边的盐分尽量都泡出来,以免摄入太多的盐分对身体不好,炒制的过程中如果感到泡的没啥咸味了,再加点盐,后加入的盐和之前没泡出来的咸味道绝对不同,用泡好的蚕豆或是黄豆都可以,加点小尖椒和肉末,炒出来那叫一个香,无论是就米饭还是就粥,都是超级的下饭。

  • 泡蚕豆150g
  • 猪肉馅100g
  • 干辣椒2个

Steps to make 蚕豆肉末炒雪菜

  • 1.雪菜在清水中清洗干净,泡到基本没有咸味了,准备好其他配料。
  • 2.雪菜切小粒,干蚕豆提前泡软,剥去外皮,干辣椒切段,葱姜切丝。
  • 3.锅中放油烧至5成热,把干辣椒爆香,再下葱姜丝炒出香味,接着把肉馅放入煸炒至变色。
  • 4.下蚕豆煸炒至8成熟。
  • 5.放料酒。
  • 6.放生抽调味。
  • 7.把雪菜粒倒入煸炒。
  • 8.放一小勺白糖。
  • 9.放适量的盐,(我泡的时间长基本没有咸味了),煸炒一会,可以再加点水炒(因为我放雪菜和蚕豆时都带了点水,所以没有加水)。
  • 10.最后临出锅前点点香油,出锅成盘。
  • 11.简单下饭的肉末炒雪菜就做好了。
