Steps to make 五仁月饼

  • 1.1、事先将所有的干果仁烤熟,葵花籽放入保鲜袋中用擀面杖压碎。核桃仁和南瓜子仁用刀剁碎备用。
  • 2.糖冬瓜和番茄脯切成小丁备用。
  • 3.将核桃仁,葵花籽仁、南瓜子仁、芝麻、冬瓜糖、番茄脯全部放入大碗中混合均匀。
  • 4.放入白砂糖、玉米油、白酒、玫瑰糖、水,然后搅拌均匀。
  • 5.放入糯米粉,不要全部放入,边拌边加,软硬程度合适就行。
  • 6.五仁馅拌好后盖上保鲜膜备用。
  • 7.转化糖浆放入大碗里,加入碱水和玉米油搅拌均匀。
  • 8.筛入面粉和奶粉,揉成光滑面团发酵1小时左右。
  • 9.把五仁馅和面团按7:3的比例称量好,揉成小丸子。
  • 10.取一面团压成饼状,放入五仁馅,慢慢推动面皮收口。
  • 11.模具撒入熟糯米粉后将多余的米粉倒出,把包好的面团放入,压成月饼状。
  • 12.全部月饼压好放入铺了油纸的烤盘中。
  • 13.喷上一些水,放入预热好的烤箱中。(烤制温度180度,时间20分钟)
  • 14.烤五分钟,月饼定型后取出,刷上一层蛋液,然后再放入烤箱继续烤。烤好后放置一天回油后再食用。
