京味儿小菜“椒油爆腌萝卜皮”
刚刚入冬后,在北京正是各种萝卜大量上市的季节,萝卜既好吃又物美价廉,营养还十分丰富。可以用萝卜制作很多好吃的应季菜肴,白萝卜可以炖肉煲汤,红皮的水份较少的便萝卜可以制作成馅料,用它来包包子或包饺子等,而青皮绿瓤的萝卜或心里美萝卜可以生吃或拌各式凉菜等,总之,吃法很多。
用心里美萝卜除了拌糖醋萝卜丝外,而剥下来的萝卜皮还可以制作一道北京传统的小菜,叫做“椒油爆腌萝卜皮”。制作这道小菜很简单,只需用盐、花椒油和辣椒油一拌稍腌片刻就可以,其做法如下;

Steps to make 京味儿小菜“椒油爆腌萝卜皮”

  • 1.把洗净的萝卜皮用刀斜片成小片。
  • 2.把片好的萝卜皮撒入适量盐拌匀。
  • 3.然后放入容器里。
  • 4.用手勺炸制花椒油。
  • 5.把花椒炸香后手勺离火片刻,使温度稍降下来然后放入干辣椒炸香。
  • 6.趁热把油浇淋在萝卜皮上。
  • 7.然后盖好容器盖子腌制一小时便可食用。
