焦糖香蕉挞
用老酸奶做了奶油奶酪,淡奶油也快到期了,所以找了个焦糖香蕉塔的方子!香蕉和焦糖很配哦!就是步骤有点复杂,材料看起来有点乱,请喜欢的亲照着步骤里的材料做好了!

  • 高筋面粉17g
  • 细砂糖220g
  • 蛋液225g
  • 奶油奶酪30g
  • 淡奶油60g
  • 低筋面粉22g
  • 香草籽少量
  • 黄油15g
  • 细砂糖120g
  • 蛋液120g
  • 低筋面粉167g
  • 黄油230g
  • 盐20.5g
  • 杏仁粉230g
  • 细砂糖315g
  • 蛋液324g
  • 香蕉2根
  • 朗姆酒5g
  • 细砂糖60g

Steps to make 焦糖香蕉挞

  • 1.塔皮:黄油60克,盐1克,细砂糖20克,香草籽一起搅打至颜色发白
  • 2.分次加入20克蛋液搅拌均匀
  • 3.杏仁粉13克,低粉67克,高粉17克混合筛入上面拌匀的黄油糊里,用刮刀拌匀
  • 4.和成面团放入保鲜袋,压扁冷藏松弛1小时
  • 5.塔皮松弛时,开始制作杏仁克林姆:黄油30克,细砂糖20克,盐0.5克一起搅拌至颜色发白
  • 6.分次加入25克蛋液拌匀
  • 7.筛入杏仁粉30克
  • 8.用刮刀压拌均匀这个就是杏仁克林姆,备用
  • 9.制作乳酪馅:软化的奶油奶酪30克和15克糖搅拌均匀
  • 10.加入蛋液24克搅拌均匀
  • 11.加入2克低粉拌匀
  • 12.加入淡奶油60克搅拌均匀
  • 13.乳酪馅做好了,备用
  • 14.冷藏后的塔皮从冰箱拿出,在案板上铺上保鲜膜,上面也铺上一层保鲜膜用擀面杖擀成模具的大小
  • 15.然后小心铺在模具上
  • 16.用擀面杖刮去多余的塔皮
  • 17.用钗子在塔皮上扎孔
  • 18.在塔皮上铺上锡纸压重物170度烤15分钟
  • 19.烤完拿出,稍放凉
  • 20.制作焦糖香蕉:香蕉切小段,我还对半切了,可以不对半切的
  • 21.锅中放入砂糖60克,用中火使它变成焦糖色
  • 22.加入15克黄油,改小火
  • 23.加入切好的香蕉段滚一圈
  • 24.然后加入朗姆酒,关火
  • 25.用勺子在底部抹上一层薄的杏仁克林姆
  • 26.排人焦糖香蕉
  • 27.隙缝内填满乳酪馅
  • 28.放入烤箱170度中层约40分钟,放凉即可
