美味蒸蛋糕
此款蛋糕一改蛋糕只能用低筋面粉制作的方法,采用以大米粉为主要原材,制作方法与蛋糕手法相同,采用蒸制较烤制的不同:即:不易上火,不油腻、蒸蛋糕其组织膨松,口感好,颜值高、入口即化,老幼皆宜。

  • 白醋几滴

Steps to make 美味蒸蛋糕

  • 1.将鸡蛋蛋白及蛋黄分离在两个无油,无水的容器中。
  • 2.蛋黄中加入牛奶、10g白糖、3g盐、搅拌均匀。
  • 3.食用油40g搅拌均匀。
  • 4.加入过筛的大米粉及低粉搅拌均匀。
  • 5.先将蛋白打成粗泡状,蛋白中加入20g糖继续搅打。
  • 6.分3次加入糖,每次20g,这是第三次加入糖。
  • 7.打至蛋白此状态即可。
  • 8.分3次取蛋白加入蛋黄糊中翻拌均匀。
  • 9.第二次加入蛋白至蛋黄糊中翻拌均匀。
  • 10.将剩余的蛋的倒入蛋黄糊中翻拌均匀,蛋糕糊制作完成。
  • 11.提前准备好枸杞、青、红丝碎点缀用(青、红丝有点干燥、颜色蒸了就好了看了)。
  • 12.将蛋糕糊倒入蛋糕模具中。
  • 13.将枸杞简单摆一下、青、红丝碎撒入蛋糕糊上点缀。
  • 14.蛋糕糊覆膜防蒸汽滴入,锅中水开后,放入蛋糕模具,蒸制45至50分钟,停火后3至5分钟后再打开锅盖(水要一次性加足,中途无法添水)。
  • 15.蛋糕托膜完整,这是我前两年的自配方蛋糕,做了N次效果都非常好。
  • 16.切开蛋糕,口感膨松,入口即化。
  • 17.蛋糕的米香浓郁,不粘不塌。
  • 18.做为下午茶食用漂亮又美味。
  • 19.家人很喜欢吃大米粉做的蛋糕,香甜不油腻。
