蔓越莓戚风蛋糕
喜欢烘焙,却又拒绝高热量,也不喜欢甜腻,所以我一直在探索低油低糖的烘焙,这款蛋糕我把油和糖都控制到了极限,做了好几次了,都很成功,低油低糖的蛋糕,吃了还想吃,加了蔓越莓,正好掩盖了鸡蛋的腥味,我家那位对烘焙非常挑剔的主这次对于这款蛋糕也大加赞赏。由于糖量非常少,我采用的是冷冻了的鸡蛋,稳定性好些,用的中空戚风蛋糕模具,受热均匀,普通的蛋糕模具我没尝试过,不建议使用细而高的模具来烤。

  • 鸡蛋三个
  • 低筋面粉70克
  • 牛奶50克
  • 白砂糖35克
  • 玉米油15克
  • 蔓越莓干15克
  • 柠檬汁几滴

Steps to make 蔓越莓戚风蛋糕

  • 1.蔓越莓干切成碎末待用
  • 2.鸡蛋蛋黄和蛋清分离,蛋黄里加入牛奶、玉米油拌匀
  • 3.筛入低筋面粉
  • 4.加入蔓越莓干,用刮刀上下翻拌均匀,不要过分搅拌,以免起筋
  • 5.蛋清里加入几滴柠檬汁,加入白砂糖
  • 6.先低速、再高速,打到湿性发泡后转中速,一鼓作气将蛋清打至硬性发泡,检查是否硬性发泡,就是提起打蛋器,能拉出直挺短小的尖角
  • 7.先用少许打发的蛋白加入到蛋黄糊里,将蛋黄糊充分稀释拌匀
  • 8.分次加入打发好的蛋白,上下翻拌均匀,千万不要转圈拌以免消泡
  • 9.倒入中空戚风蛋糕模具中,震动几下,去掉大泡
  • 10.放入预热的烤箱中下层,上下火,150度,75分钟
  • 11.出炉后立即倒扣在烤架上让其冷却,大约1个小时
  • 12.脱模了
