蜂蜜无花果烤鸭
秋冬食鸭,不仅肉肥嫩,而且滋润降燥——鸭肉味甘性凉、无毒;鸭肉的脂肪很健康,富含B族维生素和维生素E,化学成分接近橄榄油,能够降低胆固醇。《红楼梦》中就有用鸭肉煮粥,作为老年人食疗进补的方法。鸭肉还富含钾,与同样富含钾的无花果搭配,能够保护心脑血管的健康,两者搭配,可谓相得益彰。

用蜂蜜增加甜味儿,用柠檬汁增加酸味儿,再加上橙皮和柠檬皮带来浓浓的果香,少许一点儿盐和胡椒,就烤出了无比鲜甜甘美的味道。烤熟了的无花果也更甜、更糯,吃上一口肉,再来一颗无花果,不仅解腻,而且热乎甜美,竟成点睛之笔。

Steps to make 蜂蜜无花果烤鸭

  • 1.柠檬和橙子仔细洗净表皮,并取皮屑备用(用磨姜盘比较给力,没有可以先削下表皮再切成末,注意劲量不要削下白色部分);姜切末备用;
  • 2.柠檬榨汁备用;
  • 3.将橙皮屑、柠檬皮屑、姜末和一半柠檬汁放进小碗,加入蜂蜜;
  • 4.搅拌均匀成调味汁,备用;
  • 5.鸭腿洗净,用厨房纸吸干水分;
  • 6.两面均匀抹上一层盐和胡椒粉;
  • 7.烧热平底锅,加入少许食用油,下入鸭腿煎至两面出现焦色,先煎有皮的一面,上色后再翻面;
  • 8.煎好的鸭腿放入烤盘,均匀撒上调味汁;
  • 9.鸭腿表面再均匀撒上少许盐,不要太多,有点儿就行;
  • 10.烤箱提前预热190度,放入鸭腿,先烘烤30分钟;
  • 11.取出烤盘,将鸭腿周围的汤汁浇在鸭腿表面;
  • 12.再均匀浇上另一半柠檬汁;
  • 13.无花果切成两半,用果肉蘸上汤汁;
  • 14.摆在鸭腿的空隙中;
  • 15.再次送入烤箱,190度再烤10到15分钟;
  • 16.取出装盘,浇上烤盘中剩余的汤汁,即可。
