Steps to make 潮式月饼

  • 1.将水油面、油酥面,各自调好醒发20分钟。水油面:面粉500克,砂糖50克,色拉油100-150克,水200克,红曲粉适量。油酥面:面粉400克,色拉油200克。
  • 2.分成等量的份:水油面30克,油酥面15克,搓圆成团;取一份水油面团,摁成圆形面皮,翻过来,放一个油酥面团在中间包好。收口捏紧。
  • 3.收口向上,将面团擀成长条形,卷起成长卷状。将所有材料同上操作,全部卷好后收口朝上,松驰15分钟。
  • 4.然后将面卷竖放,摁扁,再次擀长成长条形,卷起。再次松驰20分钟。
  • 5.取一个面团,从中间离开,不要切开,用力切容易将酥层切乱。
  • 6.切面朝下立放,摁扁,擀成中间厚,四周薄的圆面皮。
  • 7.包上豆沙馅20克,向上顶一下,边捏边往上收,层次就出来了,这个很重要。收口捏紧后,收口朝下,滚圆,整成生坯。
  • 8.将所有生坯在烤盘中摆放整齐,烤箱预热,180度,上下火,中层,20分钟。
