毛豆戚风蛋糕卷
从小到大一直不喜欢吃毛豆,因为不喜欢那种满口钻的感觉。但其实毛豆的营养学价值蛮高的,毛豆中的脂肪含量明显高于其它种类的蔬菜,但其中多以不饱和脂肪酸为主,如人体必需的亚油酸和亚麻酸,它们可以改善脂肪代谢,有助于降低人体中甘油三酯和胆固醇。
各种原料的戚风蛋糕做得多了,总希望有点突破,现在毛豆正当时,于是突发奇想决定做个毛豆戚风卷,没想到十分惊艳。

  • 蛋黄5只
  • 蛋白5只
  • 色拉油70ML
  • 牛奶70ML
  • 低粉100克
  • 果酱50克
  • 70克

Steps to make 毛豆戚风蛋糕卷

  • 1.毛豆洗净,在沸水中煮10分钟
  • 2.煮熟的毛豆泡在冷水中,去掉外面一层软皮
  • 3.毛豆加牛奶放入食品处理机里面打成细蓉(尽量细哦)
  • 4.蛋黄加砂糖打散
  • 5.加入色拉油拌匀
  • 6.加入毛豆蓉拌匀
  • 7.倒入过筛两次的低粉
  • 8.用手动打蛋器快速搅匀
  • 9.蛋白分次加糖打至9分发
  • 10.将1/3的蛋白加入蛋黄糊中拌匀
  • 11.将蛋黄糊倒入剩下的2/3蛋白糊中
  • 12.用切拌的方式把蛋糊拌匀
  • 13.将蛋糊倒入铺好油纸的烤盘中,烤箱预热180℃,烤15-20分钟
  • 14.烤好后倒扣在烤架上
  • 15.趁热撕去油纸,涂上果酱
  • 16.将蛋糕卷起,外层裹上油纸,放冰箱冷藏15分钟切片即可
