蒸蛋糕
蒸蛋糕,口感湿润,松软香甜,不油腻,不上火,特别适合老人孩子吃,当早餐或者小零食都好吃,我家隔三差五蒸一次,老人孩子都爱吃。

Steps to make 蒸蛋糕

  • 1.备齐材料,自己动手蒸蛋糕,真材实料,无任何添加,吃得也放心。
  • 2.取两个无油无水的盆,把3个鸡蛋蛋白蛋黄分离。
  • 3.蛋黄中加入20g牛奶、15g橄榄调和油、10g白糖搅拌均匀,充分搅拌至乳化状态。
  • 4.筛入蛋糕粉切拌均匀,记得是切拌而不是搅拌,不能画圈搅拌。
  • 5.蛋白中加入盐,柠檬汁打发,分三次加入剩余的20g白糖,打发至提起电动打蛋器有两个小尖角不倒就好了。
  • 6.将打发好的蛋白霜分三次加入到蛋黄液中,以“之”字形切拌均匀。切拌蛋糕液的同时,蒸锅中加入适量的水,开火烧水。
  • 7.6吋活底蛋糕模具薄薄地刷层油,将切拌好的面糊倒入模具中,轻震一下,或者用牙签在蛋糕糊中来回划几下,去除大气泡。将模具包上保鲜膜,用牙签扎几个小孔透气,水开入蒸屉,大火蒸40分钟。
  • 8.时间到,关火,打开锅盖立即出锅,蛋糕就蒸好了。
  • 9.揭掉保鲜膜,倒扣在盘子中,凉后脱模。
