  • 1.鲜活鱼一条
  • 2.去内脏,鱼腮,两面切上刀口
  • 3.抹上盐,料酒,姜汁,生姜腌制半天入味
  • 4.沥汁或用厨房纸吸去水汁,两面抹上面粉
  • 5.油烧开下入腌好的鱼
  • 6.油炸
  • 7.翻面
  • 8.炸香脆,炸熟透
  • 9.摆盘
  • 10.备豆瓣酱,芹菜,辣椒粉
  • 11.倒出多余的油,倒进豆瓣酱
  • 12.撒上辣椒粉
  • 13.炒匀
  • 14.放点高汤或清水烧开
  • 15.撒上芹菜或大蒜
  • 16.撒上味精
  • 17.烧好的调汁浇在炸香的鱼上
  • 18.即可上桌。
