Steps to make 东安鸡

  • 1.取新鲜母鸡,去内脏洗净。(清洗干净很重要不然有腥味并且汤是浑的),然后放进去汤锅里,6分钟左右。
  • 2.生姜切丝和花椒去籽炒香再碾碎做成花椒粉。
  • 3.鸡出汤锅放凉,汤锅各家的口味并不一样
  • 4.鸡肉切块 东安鸡最原始的做法是一只鸡剁成八点,现在对这种土豪做法进行了改进, 效果大概是这个样子的,这个碗有点旧大家就不要在意这些细节了
  • 5.热锅放入鸡油 倒入鸡块放点花椒 把鸡肉爆炒几分钟放入生姜 小米椒 辣椒粉 和米醋 (米醋和鸡油很关键。鸡油特别香,米醋有甜味)
  • 6.放入高汤,再煮4-5分钟加入切好的红辣椒,红辣椒熟了就可以出锅了
