Steps to make 香辣小龙虾

  • 1.小龙虾用清水冲洗3次后放入2汤匙盐,再倒入清水没过小龙虾浸泡2小时,清洁干净。
  • 2.龙虾尾巴有左中右三瓣,红圈中,中间那个长在最上面的瓣,用食指和拇指捏着最根部掐断一扭,扯出来的就是泥肠子了。如果这样处理感到危险的话,可以把小龙虾们放到盆里用冰箱速冻一下,这样小龙虾就老实了。
  • 3.用刷子将虾子刷洗干净,沥干水份
  • 4.锅里面放油,比炒菜多一倍。烧热,放入控干的小龙虾。炒均匀。放入所有配料,炒到小龙虾变红。
  • 5.盛出来备用。
  • 6.锅里剩下的油,放入郫县豆瓣小火炒到豆瓣和油融合,加两茶匙白糖,一茶匙五香粉,炒均匀。
  • 7.倒入小龙虾,翻炒均匀
  • 8.兑一瓶啤酒不够加水,不要淹没龙虾,刚齐平为好。加一茶匙盐。和少许料酒
  • 9.大火煮到汤汁下去一半。关火,泡一会,汤汁稍微凉一点就可以吃了。
