老北京小吃“扒糕”
“扒糕”在北京已不多见了,那种吃食还是儿时的记忆!记得小时候,扒糕在北京随处可见,中午放学饿了,在路上便可吃到。
“扒糕”做起来很简单,其实,就是用荞麦面制作的。夏天凉吃,冬季可用油来煎着吃,佐料配以腌胡萝卜丝、蒜泥、辣椒油,还有就是用芝麻酱、芥末酱、酱油、醋等混合勾兑的酱料,吃起来很好吃。
今天做这款“扒糕”,也算是对儿时曾吃过的美食的那段回忆吧!具体做法如下;

  • 腌胡萝卜丝20克
  • 香菜末少许
  • 2克
  • 酱油15克
  • 20克
  • 芝麻酱50克
  • 芥末酱20克
  • 辣椒油10克
  • 大蒜泥20克

Steps to make 老北京小吃“扒糕”

  • 1.荞麦面、腌胡萝卜丝、盐、酱油、醋、芝麻酱、芥末酱、辣椒油、大蒜泥、香菜末。
  • 2.往荞麦面里放少许盐拌匀,用热水合成软面团。
  • 3.把面团放入盘或碗里按平。
  • 4.罩上保鲜膜上笼蒸20分钟。
  • 5.蒸熟后取出晾凉,然后用刀切成条码入盘中,里面放入腌胡萝卜丝。
  • 6.浇上用芝麻酱、芥末酱、酱油和醋混合的酱料。
  • 7.再浇上辣椒油、蒜汁,最后撒一点香菜末拌匀便可食用。
