自制美味腌薤(音读叫)头
薤头,属百合科葱属植物,为葱蒜类蔬菜,,我国自古栽培至今已有三四千年栽培史,尤以广西、湖南、贵州;四川、湖北、广东、江西等省栽培较多。 薤头的鳞茎和嫩叶均可作菜熟食,鳞茎又具良好的加工性能,适于作盐渍、酷渍、酱溃、搪溃、罐藏等。腌制后的薤头不仅具特殊的香气,且色泽晶莹、松脆爽口。因此,薤头成了良好的佐餐物和淡季蔬菜补充品。中医上以干燥鳞茎(薤白)入药,性温、味苦辛,能通阴散结,主治胸痹疼痛、泻痢等症。不管中医上怎么说,这是从小起家中就喜欢腌渍的一种小菜。

  • 2.切去须根和上部的嫩茎部分
  • 3.再次冼净控干水分
  • 4.泡菜坛冼净晾干水分
  • 5.准备好盐、白酒和剁椒等配料
  • 6.将冼净薤头和盐、白酒、剁椒按比例配好拌匀
  • 7.将其入坛
  • 8.坛口上放一小碟防止外面的水入坛,再将坛的盖子倒扣在坛沿的水中
  • 9.20多天后就可以出坛食用了,配碗白粥,开胃清爽,适合天气热时食用。
