Steps to make 墨鱼炖河蚌

  • 1.提前一夜将墨鱼和饭豆用温水泡发。
  • 2.将泡发好洗净的墨鱼切片,饭豆冲洗净控水,生姜切片。
  • 3.河蚌用盐搓洗三次,每次用两大勺盐,盐揉搓后,用水冲洗三遍,控水,再次放盐揉搓,再用水冲洗,反复三次,直到洗至无粘液,洗的过程中将黑色的清理掉。
  • 4.起锅放菜籽油,用生姜炝锅。
  • 5.放入河蚌翻炒。
  • 6.炒到水干时,倒入一瓶盖二锅头。
  • 7.即时盖上锅盖,煮十五秒左右。
  • 8.打开锅盖,让酒精的挥发带走腥味。
  • 9.继续翻炒至水干,一定得炒干才不会有腥味哦。
  • 10.倒入一大碗水,用电压力锅炖不费水,如用砂锅炖得一次性加足水。
  • 11.煮开,去除浮沫。
  • 12.倒入放有饭豆的电压力锅里。
  • 13.用汤勺搅匀。
  • 14.盖上锅盖。
  • 15.选择蹄筋/豆。
  • 16.炖好,出锅前加少许盐拌匀,盛碗撒上葱花。
