蒜茸粉丝龙虾尾
今天又买了两条较小的龙虾尾,记得曾经用蒜茸烤过,很香很鲜, 人生总要有多种尝试,这次改用蒜茸蒸,加上粉丝吸汁,估计也挺好,也有人说粉丝比龙虾好吃,但自我感觉还是龙虾肉好吃些,又爽又脆,当然,粉丝吸收了龙虾的鲜味后那也很美味,呵呵。

  • 龙虾尾2条
  • 粉丝1扎
  • 蒜头约10粒
  • 生姜1块
  • 大红葱头1/4个
  • 红辣椒1条
  • 精盐1/4小勺
  • 白糖1/8小勺
  • 胡椒粉1/4小勺
  • 白酒1小勺
  • 芝麻油1/2小勺
  • 鱼露1/2小勺
  • 精盐1/4小勺
  • 香葱1条
  • 生油或菜油2大勺

Steps to make 蒜茸粉丝龙虾尾

  • 1.泡发粉丝约2小时,泡好后用剪刀剪成几段。
  • 2.在粉丝里加鱼露1/2小勺、精盐1/4小勺稍抓腌一下,让粉丝有点底味,为是了保持粉丝的洁白,没用有色调料。
  • 3.把粉丝铺在碟里。
  • 4.把龙虾面上的透明薄膜剪去。
  • 5.反转背部,在每个节的缝隙扎1~2个洞,好让龙虾尾在蒸的时候把汁流下去,粉丝就更入味了。
  • 6.准备好蒜头约10粒、生姜1块、大红葱头1/4个、红辣椒1条。
  • 7.放入手拉切割器打成末状。
  • 8.然后在蒜茸姜葱末里上加入精盐1/4小勺、白糖1/8小勺、胡椒粉1/4小勺、白酒1小勺、芝麻油1/2小勺,拌均匀。
  • 9.将香葱的葱绿葱白分开,葱绿切丝用冷开水泡,葱白切粒。
  • 10.蒸锅烧开水,把龙虾尾放在粉丝上,表面均匀地铺上蒜茸调料,放入蒸锅里蒸。
  • 11.盖盖子,蒸4~5分钟。
  • 12.蒸好后出锅,均匀撒上葱丝和葱粒,用小锅热油约2大勺油热后淋在蒜茸面上,完成!Enjoy !
