清蒸金鲳鱼
平常咱们清蒸的鱼一般是现杀的活鱼,这样蒸出来的味道才够鲜美。今天逛超市发现有冰鲜的金鲳鱼刚从冷库里拿出来,鱼眼睛凸起,鱼鳃是粉红色的,虽然是冰冻过的,但是看起来还是挺新鲜的,于是买了几条回家。第一次尝试用冷冻过的鱼来清蒸,味道还不错,基本没有腥味。

Steps to make 清蒸金鲳鱼

  • 1.先准备葱姜水。碗里放少许清水,加入剁碎的大葱和生姜丝,加少许盐,用手揉捏几下。
  • 2.金鲳鱼洗干净,去内脏,改十字花刀。
  • 3.将金鲳鱼的全身抹上一层盐和适量白酒,腌5分钟后再将葱姜水抹到鱼身上,记得肚子里也要放些葱姜水,再腌制10分钟。
  • 4.盘子底部铺上生姜片和葱丝。
  • 5.把腌鱼的葱和姜丝去掉,将腌制好的鱼放入盘中,表面再铺一层生姜和葱丝,记得肚子里也要放少许葱丝和1片生姜。
  • 6.水烧开后,放入鱼盘大火蒸10分钟即可,关火焖5分钟。将鱼盘取出,倒掉盘子里的水,去掉表面的生姜和葱丝,撒上红辣椒丁和新鲜的葱丝。
  • 7.放入适量的生抽,将现烧的热花椒油淋上去。
  • 8.刺少味美很受小朋友的喜欢。
