拿破仑酥其实和拿破仑一点关系都没有,不过味道真的很好哦.好酥好香,还有我喜欢的水果!

  • 低筋面粉168g
  • 高筋面粉84g
  • 黄油125g
  • 4g
  • 冷水120g
  • 鸡蛋黄2个
  • 低筋面粉50g
  • 牛奶250g
  • 砂糖50g

Steps to make 拿破仑酥

  • 1.高粉、低粉混合,把软化的黄油放入面粉中用手一点一点搓
  • 2.盐放水里融化后,慢慢加到面粉里
  • 3.揉成面团,放冰箱里冷藏松弛1小时
  • 4.处理裹入黄油,用大的保鲜袋装入黄油,用擀面杖敲打大后入冰箱冷藏
  • 5.松弛好的面团拿出擀大放入黄油
  • 6.把黄油片包裹进面片里了,把收口压紧
  • 7.用擀面杖把包好黄油的面片,再次擀开成为长方形薄面片
  • 8.从面片的一端1/3处把面片向中间翻折
  • 9.另一端也从1/3处向中间翻折。这是第一次三折。放进冰箱冷藏松弛20分钟
  • 10.松弛好的取出后,重新放在案板上,用擀面杖擀开。重复上面再一次三折。这是第二次三折。把三折好的面片再次放进冰箱冷藏松弛20分钟,重新擀开成长方形薄面片,重复上面再一次三折。这是第三次三折。把三折好的面片再次放进冰箱冷藏松弛20分钟,重新擀开成长方形薄面片,最后一次四折。四折好的面片,冷藏松弛20分钟
  • 11.松弛好后取出并擀开成薄片
  • 12.用滚轮来回扎眼
  • 13.185度预热,中层20分钟 视各家的烤箱温度不同调节
  • 14.把烤好的酥皮切成合适的大小
  • 15.卡仕达酱:蛋黄2颗,低粉50克,牛奶250克,砂糖50克蛋黄里加砂糖搅拌均匀,加牛奶搅拌均匀,加面粉用打蛋器搅拌均匀把卡士达酱装入裱花袋里
  • 16.取一片酥皮挤上卡士达酱
  • 17.放上水果
  • 18.重复以上步骤直到完成,我做了4层,一般3层就好了
