金沙甜粟米里卷
这是卷寿司中的一种,对于卷寿司来说,不论是太卷,细卷,稻荷寿司,散寿司,手卷,里卷还是军舰卷等等等等,只要是需要海苔的,海苔的口味可以影响整个寿司的口味。
   海苔一定要选择浅草海苔,味道才会最赞!
   在日式寿司中最常用的酪梨,炸腐皮,剥皮辣椒,明太子,最好做为基础材料准备。
    醋饭用海苔卷成的称为海苔寿司或者太卷寿司,卷寿司比握寿司更难得到业界的认可,因为在日本,任何一个家庭主妇都可以做出卷寿司。
  卷寿司的竹帘分为普通竹帘和较细的京竹帘(东京竹帘),这里用的是普通竹帘。

    Steps to make 金沙甜粟米里卷

    • 1.将日本寿司醋和煮好的白米饭以饭7:醋1的比例拌匀(寿司醋可以买,也可以根据我的另一篇鲭鱼寿司里的配方自己调配),用小指和无名指指尾轻轻拨散米饭,不要揉搓,要保持饭粒每颗都是完整的,但是要散开,有人会说多此一举,一会儿一压不久全部又黏在一起了,对,是黏在一起,但是不能压破,如果饭粒已经被压的看不出形状,完全压糊在一起,那就是失败,口感和正宗寿司就会不同。
    • 2.将咸蛋黄抹在海苔上。
    • 3.铺上醋饭。
    • 4.在醋饭上均匀撒上明太子。
    • 5.然后铺上保鲜膜。
    • 6.反过来铺放在竹帘上,海苔面朝上,在海苔上铺上酪梨,甜粟米,腐皮,剥皮辣椒(甜粟米,日式炸腐皮,剥皮辣椒在超市都有现成真空罐头卖)。
    • 7.在两边都加醋饭,在饭上挤上沙律酱,在裸露的酪梨等食材上放小片海苔。
    • 8.用竹帘先将一边先按压卷起成型。
    • 9.打开竹帘将刚才卷成型的一边往另一边滚成柱状再卷。
    • 10.双手按压全卷数次,保证不会散开(合格的卷饭粒不会被压变形,但是刚刚好粘在一起,用牙签挑起都不会散开,所以用力时只能用阴力,不可用阳力使劲按压)
    • 11.使用保鲜膜包覆食材定型,可按照个人喜好做成三角形长方形,或者圆形等等。
