黄豆烧猪蹄
这是四川人民很喜欢的一道硬菜,猪蹄Q弹,黄豆软糯。黄豆和猪蹄很配,无论是红烧还是清炖,两者都能互相成全。冬日养颜菜,动手做起来。

  • 猪蹄两个
  • 干黄豆250克
  • 生姜1块
  • 冰糖1块
  • 花生油30g
  • 三奈4块
  • 八角2个
  • 香叶4片
  • 草果1个
  • 酱油1匙
  • 料酒1匙
  • 鸡精味精少许
  • 红油豆瓣1勺

Steps to make 黄豆烧猪蹄

  • 1.黄豆提前半天洗净泡涨。
  • 2.猪蹄去毛烧皮洗净剁块后焯水备用。焯水时可加入姜片、料酒去腥。
  • 3.锅中放入油和冰糖,小火炒出糖色,倒入猪蹄翻炒至上色。
  • 4.加少许郫县豆瓣翻炒至猪蹄外表红亮,上色均匀。
  • 5.加入适量清水、刚淹过猪蹄就行。
  • 6.倒入泡好的黄豆。
  • 7.放入香料:三奈、八角、香叶、草果、姜片等,调入适量的盐、酱油调味,喜欢鸡精味精的可以少量加一点。
  • 8.将猪蹄倒入高压锅中,大火烧开上汽后,转中小火压18分钟。
  • 9.阀门落下即可出锅。
  • 10.非常好吃的红烧猪蹄。颜色红亮,香气扑鼻,口感糯Q。
