酸奶老面包
用酸奶来做面包,采用了中种法,烤好的面包口感柔软,奶香浓郁,拉丝效果也很好

  • 高筋面粉150g
  • 低筋面粉50g
  • 酵母4g
  • 白砂糖15g
  • 酸奶100g
  • 牛奶60g
  • 高筋面粉150g
  • 低筋面粉50g
  • 鸡蛋60g
  • 白糖35g
  • 5g
  • 黄油40g
  • 酸奶50g

Steps to make 酸奶老面包

  • 1.中种面团材料放到面包机中,和面10分钟。
  • 2.和成面团即可,不用出膜。
  • 3.盖保鲜膜放到冰箱里冷藏发酵17个小时,是原来的2-3倍大。
  • 4.除黄油外的主面团材料放到面包机中,中种面团撕成小块放入,启动一个和面程序后放入黄油再一个和面程序,能拉出薄薄的手套膜,盖保鲜膜发酵。
  • 5.发酵好的面团。发酵时可在旁边放一碗热水以加快发酵速度。
  • 6.面团取出在面板上按揉排气,分成9等分。
  • 7.取一份擀成牛舌状。
  • 8.两边向中间折起。
  • 9.全部做好。
  • 10.面团抻长,对折。
  • 11.像卷麻花一样,两头塞进去。
  • 12.做好的面包胚。
  • 13.放到烤盘上二次发酵。
  • 14.发酵好的面包胚刷一层蛋液,撒上白芝麻。
  • 15.放到预热好的烤箱,中层上下火175℃,26分钟。
  • 16.新鲜出炉,放到烤架上晾凉,冷却后密封保存。
  • 17.成品图。
