【芸芸小厨】给食物以太阳的光辉——照烧鸡
酱汁如太阳照耀般明亮,故名“照烧”。这道日式经典菜是我家餐桌上的“常客”,不仅仅是因为香甜的味道,也因为照烧汁让鸡肉散发光辉的同时,也让心情开始闪闪亮。
照烧汁烧好可以用来烧其他质地比较紧实的肉,比如银鳕鱼、鳗鱼。

  • 清酒400g
  • 酱油700g
  • 生姜少许
  • 大蒜少许
  • 白砂糖150g

Steps to make 【芸芸小厨】给食物以太阳的光辉——照烧鸡

  • 1.鸡肉去骨,备用。200g左右味淋加300g清酒,烧开,让酒精蒸发。加入酱油600g。生姜、大蒜剁成末,加入。
  • 2.酱汁煮开后冷却,将去骨后的鸡腿加入酱汁腌制一天。
  • 3.炒香芝麻。同样,取100g味淋加100g清酒,烧开,让酒精蒸发。加入100g酱油,150g白砂糖,小火慢慢熬煮,到酱汁浓稠。取煎锅,将腌制好的鸡腿煎上色,涂上照烧酱汁。
  • 4.放入烤箱,180度,烤10分钟。出锅后撒上芝麻。
  • 5.PS.味淋是日式菜里面比较常用的调料,在进口食品超市或者万能的某宝上都有售。
