Steps to make 草莓酥 德普烘焙实验室

  • 1.1.将水油皮中的面粉和糖粉过筛后加入搅拌缸内,混合均匀;
  • 2.2.黄油切块软化与清水一起加入,慢速混合均匀;
  • 3.3.快速打至面筋完成阶段,约10-12min,
  • 4.4.加入草莓色香油继续搅拌均匀;
  • 5.5将打好的水油皮保鲜膜覆盖,松弛30min;
  • 6.6.将油酥中的黄油和低筋面粉一并倒入搅拌桶慢速混合均匀;
  • 7.7.快速打至成面团,分割成20g大小,水油皮分成每份30g大小;
  • 8.8.将水油皮分别按压成圆片并包入油酥面团;
  • 9.9.擀开后卷起,松弛10min再擀长卷起,松弛10min;
  • 10.10.卷好的面圈,正中间切开;
  • 11.11、切面朝上擀开成片状,包入豆沙成球型
  • 12.12均匀的摆入烤盘;
  • 13.13将德普F1烤箱调制常规加热190度,放中层烘烤18min;
