烤海蛎子
牡蛎,营养丰富,肉质细嫩,鲜味突出,煮汤后状似牛奶,因此被誉为“海中牛奶”
在西方,牡蛎也被称为“海之奶”。

海蛎肉中含碘量高于牛奶和蛋黄,锌含量也为食物之冠,
特有的多种活性物质及氨基酸和天然的牛磺酸,具有降血脂,提高人体免疫,促进新陈代谢,
美容养颜、宁心安神、益智健脑的功效。

海蛎子,既可鲜食,亦可加工成干制品,
汆汤,打卤、烧、软炸,还可制成罐头,蚝豉或蛎干,蚝油等,

    Steps to make 烤海蛎子

    • 1.准备好蒜米,多一些的。
    • 2.用五香油炸香。五香油的做法:将花椒一大把,葱段姜片少许,八角几颗,加入植物油300克左右或更多,小火慢慢炸,花椒快要炸糊时关火,放凉后,将油滤出就可以使用。做凉拌菜的风味很独特。
    • 3.小火将蒜米炸香,不要炸黄,蒜米口感香脆而不辣时最好。炸好的蒜米连油一起盛入小碗中备用。
    • 4.海蛎子清洗干净,摆在烤盘上,
    • 5.入烤箱240度,大概5--8分钟,开小口的时候取出(要带隔热手套)后将汤汁淋入小碗中,将蛎壳启开,(如提前将贝壳启开,5步骤可省略,我是因为打不开,所以先烤一下)
    • 6.将汤汁沉淀后加入调好的蒜香油中,依次浇在打开的牡蛎上,再入烤箱240度8分钟就可以了。 如果提前将贝壳打开,壳里的汤丢掉不要(那只是海水而已),蛎肉清洗一下再放入壳中,直接将料汁浇上,再烤出来的才是蛎肉鲜美的汤汁)
    • 7.肥美多汁,趁热吃。
