菠萝夹心饼干
今天买了个菠萝,口感偏酸,直接吃估计牙齿会受不了。于是做成了菠萝馅,接着就有个这款菠萝夹心饼干。外表酥脆,内里酸甜,很清新的感觉。酸甜的味道中和了黄油的油腻感,老公竟然没有吃出内馅是什么水果。

  • 鸡蛋20克
  • 糖粉20克
  • 奶粉25克
  • 去皮菠萝一个
  • 少许
  • 麦芽糖40克
  • 白砂糖30克

Steps to make 菠萝夹心饼干

  • 1.制作馅料:菠萝剁碎,瓤切得碎些,中间硬芯切得粗些。用纱布过滤挤出多余的水分。
  • 2.将挤干水份的菠萝放入平底锅。菠萝汁加点糖直接可以喝了。
  • 3.放入30克白砂糖,中火翻炒均匀。
  • 4.放入40克麦芽糖,翻炒均匀。
  • 5.加入适量自制的栗子泥(可以不加)。
  • 6.炒干水分,抱成团即可。
  • 7.成品很粘手,用保鲜袋隔着搓成圆球。
  • 8.制作面皮:55克黄油加入20克糖粉打发,再分次加入20克鸡蛋,打成蓬松状态。
  • 9.先将80克低粉,25克奶粉,少许盐混合。再将混合粉类过筛到黄油中。
  • 10.混合成面团。
  • 11.将面团滚成长条,切成剂子,滚圆。隔保鲜袋压扁,包入一个馅料,收口。
  • 12.用手掌根部将包好馅料的面胚压扁。
  • 13.烤箱中层185度20分钟。
