自制辣白菜
第一次学做辣白菜,感觉还不错,传上来和朋友一起分享。
  自家做的辣白菜,不一定是最好的,但口味一定是最适合自家的。

  • 胡萝卜1
  • 食盐120克
  • 辣椒面80克
  • 白糖60克
  • 大蒜1头

Steps to make 自制辣白菜

  • 1.原料:大白菜、梨子、苹果、胡萝卜、大蒜、老姜、辣椒面、白糖、食盐。
  • 2.白菜掰去老梆,冲洗干净切成四瓣。
  • 3.将白菜叶一片片掀开,均匀抹上盐。
  • 4.把抹上盐的白菜放置在大盆里,腌制8-10小时
  • 5.用流动的水冲洗去白菜的,洗完后挤出多余的水分,并静置着沥一沥。
  • 6.沥白菜的时候,我们来准备配料,胡萝卜、梨、苹果、姜、大蒜、均去皮。
  • 7.所有去了皮的材料擦成丝,用大碗盛装.(梨和苹果是制作辣白菜的重要配料,水果可以丰富辣白菜的口感,并促进发酵。)
  • 8.擦好的丝中加入辣椒粉、白砂糖、20克盐混合。(喜欢海鲜味的可以加入鱼露)
  • 9.所有的材料搅拌均匀成酱料,静置一刻钟左右。
  • 10.将沥干的大白菜铺平,舀上1勺酱料。
  • 11.用手均匀地抹在菜叶上。(戴上一次性手套,防止辣椒刺激皮肤)
  • 12.每一片菜叶都均匀地抹上酱料。
  • 13.将抹好酱料的大白菜从根部向内卷起。将卷好的大白菜,放入无油无水的容器中。(所有的白菜依次做好)
  • 14.将大碗中剩余的酱料倒入在卷好的白菜上,盖上盖儿,室温下放一天自然发酵,再放入冰箱冷藏,一周左右即可食用。
  • 15.腌制了三天的辣白菜。
  • 16.腌制了一周的辣白菜,等不及,先尝尝。
