韩式煎鱼
沈阳的‘西塔’地区是朝鲜族人的聚居区,也有不少韩国人在那里生活、娱乐。那里有很纯正的韩式料理,这道‘韩式煎鱼’就是俺在那里照猫画虎山寨来滴。俺做的虽然算不上很纯正,不过经过家人的品尝,味道还是很正点滴~~~
煎鱼谁都会做,关键是酱料,下边就献上‘咖啡’家的独门酱料~~~韩式煎鱼一般用的都是明太鱼,我没有买到,就买了2条新鲜鲅鱼来代替,鲅鱼肉嫩,腥味不浓,刺少,肉厚,我觉得还是挺适合做这道菜~~

  • 鲅鱼两条
  • 葱姜蒜各一勺
  • 芝麻两大勺
  • 韩式辣酱两勺
  • 一勺
  • 鱼露一勺

Steps to make 韩式煎鱼

  • 1.将韩式辣酱、葱姜蒜末、糖、鸡精、鱼露(或者海鲜酱油)、清水放入小碗中拌均成调料汁备用。
  • 2.炒锅烧热,锅中倒油,油热后放入芝麻炒香。
  • 3.将拌好的调料汁放入锅中大火烧开,转小火熬制成浓稠状。
  • 4.盛入小碗即可。
  • 5.鲅鱼去头,收拾干净。
  • 6.从鱼腹那面抛开,背部不要切段,打开成大片状。
  • 7.将鱼沥干水份,薄薄的撒一层盐,放入冰箱腌制1-2小时。
  • 8.将腌好的鲅鱼表面撒少量干面粉,煎至两面金黄装盘。
  • 9.表面浇上酱汁,撒上香菜末就可以食用了。
