辣椒炒茭白
入秋了,产自南方水乡的茭白也现身北方的菜市场了。茭白有“水中小人参”的美称,其含有丰富的膳食纤维、蛋白质、碳水化合物、维生素E、钾等营养素,可荤吃,也可素炒。块、片、丝,想怎么做都可以。

茭白的菜我每年都要分享几道,可炒可炖可入馅,今儿我再分享一道快手素菜——辣椒炒茭白,虽然是素的,但是又香又嫩,味道做得淡一点,都能代替一部分主食。爱吃肉的,加点肉丝同炒也超级棒!

Steps to make 辣椒炒茭白

  • 1.茭白去掉老根及叶片,辣椒清洗干净,青红均可,吃不了辣的换成彩椒或者芹菜、青蒜等均可。
  • 2.茭白先切薄片再切细丝,辣椒切细丝。
  • 3.热锅温油,葱花炝锅,茭白和辣椒同时入锅翻炒。
  • 4.倒少许盐,很快茭白就变软了,这两种食材的含水量都不大,可少量多次淋水增加湿度,使食材受热均匀,加速成熟。
  • 5.想吃素雅清淡的无需加酱油,撒点鸡粉即可;想吃颜色深的,可淋适量酱油或生抽。
  • 6.翻拌均匀即可出锅。
  • 7.辣椒炒茭白,清淡爽口开胃!
