北海道戚风蛋糕
君之的北海道戚风,其实也就是把普通戚风的面粉量减掉了一半而已。由于缺乏面粉的支撑,它出炉后塌陷到令人惊讶——曾经那么高高的顶盖,竟然如地陷一般平掉。
君之道戚风原本就甜,填入奶油馅后,就更是甜上甜。自己还是直接吃蛋糕比较好。

  • 牛奶15克
  • 糖粉少许

  • 1.蛋糕料
  • 2.将蛋黄加15克细砂糖,搅打均匀
  • 3.加入牛奶和玉米油,
  • 4.搅打均匀
  • 5.筛入面粉
  • 6.拌成均匀面糊
  • 7.蛋白搅打成粗泡,分三次加入剩下的糖打发
  • 8.成为带弯钩的湿性发泡
  • 9.挖1/3蛋白到蛋黄糊中,拌匀
  • 10.倒回蛋白中
  • 11.拌成均匀面糊
  • 12.装入纸杯中,6成满
  • 13.放入烤箱中层,上下火180度,烤15-20分钟
  • 14.表面金黄,出炉
  • 15.将奶油馅装入裱花袋中,圆口花嘴
  • 16.从中央插入蛋糕内部,挤至蛋糕表面微微鼓起,拔出花嘴
