炸酱面
天一热,老人孩子都没有胃口,最想吃的就是这碗炸酱面,炸一碗肉酱卤,煮好的面条过冷水,端上桌,浇个卤,无需等待便可大口朵颐,那感觉真好,面条劲道,味道丰满,真是口口满足啊!

Steps to make 炸酱面

  • 1.香菇洗净切丁,炒锅加入适量多一点的油,下入香菇,小火慢慢翻炒,基本炒至香菇没有水分,香菇的味道都进入到油里,闻着香菇的味道特别浓郁时出锅。
  • 2.买的猪肉直接让商家给绞成肉馅,最好不要买肉馅哈,里边不知道是啥肉,我买的的是猪后鞧肉,瘦的多肥的少。
  • 3.葱、姜、蒜去皮洗净切碎,辣椒在淡盐水中浸泡十分钟左右,反复清洗干净切碎,炒香菇的余油爆香葱姜,然后下入辣椒翻炒。下入肉馅翻炒,小火炒匀炒透。
  • 4.下入炒好的香菇丁和香其酱,小火翻炒均匀,加入适量的料酒和海鲜酱油,小火炖几分钟,炖至没有水分。加入熟白芝麻,炒匀。这个酱一次可以多做点,冰箱冷藏能吃一周。
  • 5.出锅,这一锅香菇肉酱卤别提多香了,自己做就是实惠,连吃一周才过瘾。
  • 6.买现成的手擀面,里边带了不少玉米面,煮的时候一定注意,别直接下锅,抖一抖,都掉玉米面再煮,否则容易混汤。
  • 7.锅中加入适量多的水,水烧开下入面条,水要宽一些,煮面也很简单,大火煮开浇冷水,再次煮开再浇冷水,第三次煮开面条煮的恰到好处。
  • 8.出锅过冷水后捞出即可开餐了。
  • 9.再切点黄瓜丝和香菜碎一拌,那叫一个爽。
