肉末烧海参
宴会上的小碟大菜,在家做不需要什么高级的汤汁去煨制,普通五花肉末照样烧得很好吃。

  • 水发海参3只
  • 猪肥瘦肉150g
  • 蒜末5g
  • 葱末5g
  • 酱油3g
  • 白糖5g
  • 料酒3g
  • 3g
  • 鸡汤1小碗
  • 植物油20g
  • 鸡油少许
  • 西蓝花数朵
  • 灯笼椒(青黄红)数片

Steps to make 肉末烧海参

  • 1.猪肥瘦肉细细斩成肉末;
  • 2.海参入沸水锅中汆烫2、3分钟,盛出备用;
  • 3.原锅水加入少许油盐(分量外),汆烫蔬菜至颜色鲜艳,捞出后立即过凉备用;
  • 4.起炒锅,热锅凉油爆香葱蒜末;
  • 5.下猪肉末,煸炒至变色并水手收干;
  • 6.下入酱油;
  • 7.下入料酒,煸炒均匀;
  • 8.加入鸡汤,翻炒均匀;
  • 9.待汤汁沸腾后,加入少许盐、糖调味;
  • 10.下入海参,翻炒均匀后转微火,盖锅盖慢慢煨透,大约15到20分钟吧;
  • 11.少量多次调入水淀粉,勾出喜欢的浓度;
  • 12.待汤汁再次沸腾后,滴入几滴鸡油(猪油、色拉油都行),翻炒均匀,起锅。
