香酥蚕豆

Steps to make 香酥蚕豆

  • 1.蚕豆备用。
  • 2.泡一夜。
  • 3.没有开口的蚕豆用刀子把它划开,这样在炸制的时候才不会炸锅。
  • 4.全部开好口后倒出来控水备用。
  • 5.锅洗净烧干,加入适量油,再把控过水的蚕豆冷油下锅。
  • 6.然后开中火慢慢炸制,在炸制的时候,用勺子不停的搅动,这样能使蚕豆受热均匀,炸出来的蚕豆更加好看,口感更加酥脆,锅中的油温不断升高,蚕豆中的水分慢慢被蒸发,锅中有大量的气泡,这属于正常现象,这个过程大概10分钟左右,炸至10分钟过后,所有的蚕豆都开口,这个时候,要转为小火,继续炸制,1分钟过后蚕豆就炸好了。
  • 7.然后倒出来控油,放入盆中。
  • 8.上面撒上一些适量的食盐。
  • 9.然后把蚕豆装在盘中。
  • 10.成品图。
  • 11.吃一口,绝对嘎嘣脆。
