猪油花生糯米糕
这个猪油花生糯米糕,还是我老父亲在我们小时候做过的年糕。那时候住在厦门鼓浪屿,每到春节前,家家户户都浸泡糯米,然后到隔壁小组长家,排队磨粉,用布袋装着米桨,压去水分,加些糖蒸年糕。那时候的厦门人一般都喜欢蒸红糖糯米糕,很黏的那种。蒸好后的年糕,再煎炸着吃,外脆里糯的很好吃。
而我们的爸爸喜欢放些花生仁,再加些猪肥肉,这个猪油花生年糕可以说在当时很独树一帜的。
这么多年过去了,记忆中的年糕还是那么的美味。

  • 1.准备好食材
  • 2.花生用清水浸泡,剥去花生衣.
  • 3.肥肉切丁.
  • 4.糯米粉放入大盘
  • 5.放入花生仁
  • 6.放入肥肉丁,放入白糖
  • 7.分批放入清水
  • 8.搅拌成比较稠的糯米糊
  • 9.取蛋糕模,刷些植物油
  • 10.把糯米糊放入
  • 11.放入蒸锅
  • 12.水开后蒸30分钟,关火,焖5分钟.
  • 13.晾凉后倒出
  • 14.切成厚片
  • 15.锅里油热,放入年糕,两面煎成金黄色即可食用.
