紫薯蒸月饼
蒸月饼,你吃过吗?其实与冰皮月饼一样的配方,工序之处在于蒸的顺序以及馅料的做法。个人觉得蒸月饼更美味,无油低糖。
蒸月饼, Q弹,有嚼劲,滑爽。蒸着吃,很方便,还可以根据自己的喜好,用各种蔬菜,水果做味颜色。今天我选择的是紫薯,紫薯五谷杂粮中我最爱的一种。很适合做月饼,不仅颜色好看,还营养丰富,口感好,百搭的一种食材。重要的是实惠,还能随处可买到(很多实惠发的菜谱,都在问食材没不到,怎么办。这样的紫薯能买到吧)

  • 粘米粉35克
  • 澄面20克
  • 白砂糖40克
  • 奶粉50克
  • 紫薯200克

Steps to make 紫薯蒸月饼

  • 1.准备食材:糯米粉、粘米粉、澄面、奶粉拌均,过刷。以及紫薯白砂糖等食材;
  • 2.紫薯洗净,放入锅中蒸熟;
  • 3.蒸熟的紫薯,放凉,去皮,捣碎;
  • 4.捣碎的紫薯泥、白砂糖、倒入拌均的米粉中,加入沸水拌均;
  • 5.揉成光滑的团,再分成60克一个小团;
  • 6.放入月饼模具中,压出月饼模型;
  • 7.做的月饼胚放入蒸笼中;PS:月饼底部可以垫粽叶或蒸纸。
  • 8.清水煮沸,隔水放入大火蒸15分钟,关火之后焖三分钟,放凉即可吃。
