芒果慕斯蛋糕
一款不用烤箱不用开火做的蛋糕——芒果慕斯蛋糕,吃起来冰凉冰凉的,芒果味很浓郁,口感很嫩滑,是下午茶的最佳甜品。

  • 奥利奥饼干80g
  • 黄油35g
  • 冷开水40g
  • 吉利丁片14g

Steps to make 芒果慕斯蛋糕

  • 1.用研磨机或者擀面棍将奥利奥饼干擀成粉末状。
  • 2.6寸活底模具底部铺一张裁剪好的油纸,,黄油隔水加热融化成液体,倒入饼干末里拌匀,再倒入模具里,用汤匙压平压紧实,放入冰箱冷藏备用。
  • 3.200克芒果肉切块放入料理机里,搅打成芒果泥。
  • 4.10克吉利丁片放入冰水中浸泡十分钟。
  • 5.芒果泥倒入小锅里,隔热水加温到50度(芒果泥温度不要高于50度,否则会影响后期凝固),将泡好的吉利丁片拧干水分,放入芒果泥里,拌至吉利丁全部融化。放凉后放入冰箱冷藏几分钟。
  • 6.淡奶油加糖倒入搅打盆里,隔冰水或者冰袋,用电动打蛋器搅打淡奶油,打到还可以流动的状态。
  • 7.将冷藏过的芒果酱倒入淡奶油里。
  • 8.搅拌均匀,成芒果慕斯液。
  • 9.倒入一半的芒果慕斯液到模具里,加入芒果肉。
  • 10.再倒入剩余的芒果慕斯液,在桌面上震几下,震出大气泡,放入冰箱冷藏2个小时。
  • 11.做镜面:芒果肉90克加40克水用料理机打成芒果泥,倒入小奶锅里,隔热水加温到50度,将浸泡过的4克吉利丁片拧干水分后放入,拌至吉利丁片全部融化。其实这个步骤与前面做法一样的,最后淋在表面,放入冰箱冷藏4小时。
