炸麻叶
小时候,最喜欢吃奶奶炸的麻叶,脆脆的满满的芝麻香味,基本只有过年才能吃到。凭着记忆,自己试着做了一下~

Steps to make 炸麻叶

  • 1.取500克面粉,加入适量白芝麻、黑芝麻,少量食用盐、油,凉水和面。
  • 2.食材和成一个光滑的面团,醒15分钟备用,面团尽量硬一点,这样麻叶更脆。
  • 3.醒好的面团切成面剂。
  • 4.面剂擀成面片,尽量擀的薄,炸出来脆。
  • 5.擀好的面片,切成自己喜欢的形状,我是随意切了几刀,没什么特定的形状。
  • 6.油温六成热,下锅炸制,全程中火。麻叶比较薄,温度过高,很容易炸黑,影响口感。
  • 7.面片下锅定型,马上翻面。不停用筷子搅拌,防止炸黑。
  • 8.两面金黄色,捞出沥油。
  • 9.麻叶金黄酥脆,芝麻香味浓厚。做零食做主食都可以。
