自制开胃凉粉
天凉快了,老妈说,弄点凉粉吃,再不吃过些天就不敢吃了!老妈的话如同“圣旨”,我麻利儿着赶紧做。

凉粉并不难,按淀粉和水的比例操作,一准儿成功。强调一下,淀粉和水是按容量配比的,不是按重量,所以要准备两个大小相同的杯碗啥的。不同淀粉的用量我会在制作过程中提到,可根据能取得的材料和口感来选择。

至于配料调料嘛,就按着自己喜欢的来吧!但醋和大蒜是必不可少的,没了这俩,凉粉仿佛没了灵魂。

  • 大蒜5瓣
  • 少许
  • 辣椒油或香油少许

Steps to make 自制开胃凉粉

  • 1.豌豆淀粉准备好,再准备两个容量相等的容器。
  • 2.用豌豆淀粉做凉粉的比例是:1杯豌豆淀粉:6杯水;用绿豆淀粉的比例是:1杯绿豆淀粉:5杯水;用红薯淀粉的比例是:1杯红薯淀粉/葛根淀粉:4杯水。
  • 3.先用一杯水将淀粉混合成淀粉浆,放一旁备用。
  • 4.5杯水倒小锅里。
  • 5.大火煮开后转小火,保持微沸状态。
  • 6.将淀粉浆再次搅拌均匀,无淀粉沉淀,缓慢倒入开水锅中,一边倒一边搅拌。
  • 7.待全部淀粉浆全部入水后,用搅拌棒充分搅拌,直到白色的淀粉浆变成透明状的淀粉糊,关火。
  • 8.将淀粉糊倒入事先准备好的玻璃保鲜盒或者碗中;热气基本散尽再盖盖;可放室温下晾凉,着急吃就放冰箱一小时;冷藏时间不宜超过6小时,时间越久,淀粉老化程度越快,吃起来就不是Q弹柔软的口感了。
  • 9.配菜可随意,随手取材:黄瓜、小葱、大蒜、小米辣。
  • 10.黄瓜切丝垫在碗底。
  • 11.取一盒凝固好的凉粉,倒扣直接脱模。
  • 12.切成喜欢的粗条、细条或者块状,铺在黄瓜丝上。
  • 13.大蒜拍扁剁碎,小葱切末,小米辣切圈。
  • 14.蒜末葱末小米辣均匀撒在凉粉上,再根据口味淋上醋、生抽、盐调成的料汁,淋辣椒油或者香油可随意,一碗简单又开胃的酸辣凉粉就做好啦!
  • 15.自制酸辣凉粉,清淡开胃热量低!
