不打发无冰渣的美味奶油雪糕
没有冰渣的秘诀是,把奶糊倒进模具后,不要着急速冻。晾凉一会儿,再速冻,没有水汽,雪糕成品后没有冰渣。做了原味、紫薯、可可味,下次试下抹茶和芒果味。没有色素原料就全部做原味,一样好吃*。

  • 1.准备材料。先把牛奶和淡奶油倒进奶锅里拌匀。然后加入香草精和糖粉调匀。再 筛入粉类。用刮刀或者蛋抽拌匀。
  • 2.拌匀后。把奶锅放炉上,小火加热,边搅拌边加热,免得糊底。加热至奶糊微微冒泡,关火,晾凉一些后,把奶糊分成三份,一份什么都不加,一份筛入紫薯粉调匀,一份筛入可可粉调匀。然后把所得到的奶糊都过滤一遍,成品更加细腻润滑。
  • 3.把调好的奶糊倒进模具,撒巧克力豆。
  • 4.这是原味的奶糊。全部倒好,晾凉一会儿,速冻六小时以上。即可取出脱膜品尝享受。
