Steps to make 川辣卤牛肉

  • 1.备料,小米辣洗净,大蒜、花椒略拍,老姜切片
  • 2.热锅起油,下干辣椒、花椒、大蒜、小米辣炒香
  • 3.加足量的水,牛腱冷水下锅,大火烧开
  • 4.加生抽、老抽、冰糖、盐和剩余的香料(觉得备香料麻烦的童鞋可以直接用五香粉,比如十三香),转中火炖煮1个半小时左右
  • 5.卤好的牛肉在卤汁中静置放凉后沥干
  • 6.切片装盘,撒上秋葵片和小米辣圈,再淋上一勺卤汁或香油即可(卤好的牛肉可以搭配各种配料吃,也可以直接吃。个人推荐用小葱或者香菜加香油拌一下,或者蘸辣椒面吃)
